Home-made noodles - a unique way to save on purchased pasta

Any of us will distinguish the taste of homemade noodles from the store at least in its density. Our mothers and grandmothers tried to make it as transparent as possible, and the thinner the layer of dough was, the more experienced the cook was who rolled it out!

In Soviet times, noodles were definitely cooked for the weekend and devoted almost the entire free day to this activity, since it was created a week ahead and for the whole family, because there was no such abundance of pasta on the shelves at that time. On all holidays, homemade noodles with boiled chicken were solemnly served and this was the main dish of the evening. By the way, the products for such a dish are purchased the simplest and the noodles are much more economical for the family budget than the pasta from the store!

Ingredients to create 4 servings of homemade noodles:

- 2 tbsp. wheat flour;

- 0.5 tbsp. water;

- 1 chicken egg;

- 2 pinches of salt;

- 1 pinch of citric acid.

Do not be surprised - this is really the whole composition of the products needed to create noodles!

To cook such a homemade dish - first of all you have to do the dough. Roll up the sleeves and break into a bowl with high sides chicken eggs. Beat them with a fork and add salt. Add the citric acid after the salt - it will not let the dough float and will restrain the gluten.

Then pour water into the container and mix.

There comes a turn of wheat flour - pour it into the liquid in several parts and knead well to avoid the formation of lumps. If you have a bread machine in the kitchen, then it will become the best assistant in kneading dough for noodles.

As a result of mixing you should have an elastic ball of dough, which will not be too dense, but not very soft.

Cut the dough ball into several pieces and roll each of them into a thin layer. Roll out the dough to your liking: some like thin noodles, and others give only thick pasta. The same applies to the length of pasta!

When your dough gets the required thickness - cut it with a sharp or figured knife, carefully separating each thread of cutting.

Now the sliced ​​noodles must be properly dried. This can be done in two ways. The first is to leave it to dry overnight, spread it on the table, or send it to a baking sheet in the oven at 60 ° C for 20-30 minutes, which we will do. Carefully place the noodles on parchment paper, and then send it to the oven. There is no need to lubricate the paper.

After the specified time, check the noodles and, if it has dried, then get it out of the oven. Allow to cool slightly and pack into bags or wrap in parchment paper - your noodles are completely ready!

However, to make a hearty meal out of it, you will need salt, chicken broth, or a glass of water with a cube of broth dissolved in it.

Boil the broth and add salt to it. Put noodles in it and boil for about 3-4 minutes until it floats to the surface.

Now your homemade pasta is completely ready to eat! Enjoy your meal!

Calculating the cost of meals

And there is such a macaroni masterpiece - real pennies:

- 2 tbsp. wheat flour - 18 rubles;

- 1 chicken egg - 2 rubles;

- 1 cube of chicken broth - 5 rubles.

Total: 25 rubles
