A lot of proverbs and sayings have been written about pies - "Red threshing floor stacks, and a table - pies." So everyone who loves to cook and wants to give themselves, family and friends unforgettable, soulful tea parties, recipes for pies with fruit and berries are useful.

Cranberry pie

Ingredients:

  • 200 g cranberry jam;
  • 180 g butter;
  • 10 g of baking powder;
  • 350 g of flour;
  • 50 g of regular sugar;
  • 1 egg
  • a pinch of table salt.

Cooking:

  1. Mix, grinding, 180 g of flour with butter.
  2. Stir in salt and sugar and beat in an egg.
  3. Add the remaining flour and baking powder.
  4. After kneading the dough, divide it into two parts and place the smaller one for half an hour in the freezer.
  5. Put the rest of the dough in the kitchen into the mold.
  6. Spread jam on top.
  7. Remove the chilled dough from the freezer, grate it on a coarse grater and sprinkle evenly over the jam.
  8. Place the cake pan for 25 minutes in an oven preheated to 180 ° C.

In addition to the named berry, this pie can also be prepared with lingonberries or black currants. And the upper crumb can be even more interesting if you mix fried chopped walnuts into it.

Peach in a sour cream fill

Ingredients:

  • 300 g canned peaches;
  • 460 g of sour cream;
  • 1 tsp baking powder;
  • 3 eggs;
  • 160 g margarine;
  • 320 g flour;
  • 200 g beet sugar.

Cooking:

  1. Mix the margarine with 280 g flour and baking powder into large crumbs.
  2. Add 130 g of sugar.
  3. Add 1 egg, knead the dough and for 40 minutes put it on the shelf of the refrigerator.
  4. Cut peaches into medium slices.
  5. Add 2 eggs to sour cream and begin to beat the mass, add the remaining sugar and flour.
  6. Remove the dough from the refrigerator, put in a baking dish, forming low sides.
  7. Place the base for the cake in an oven preheated to 180 ° C for 15 minutes.
  8. Remove the cake, spread the peaches evenly, pour the sour cream on top and return to the oven for 35 minutes.

For the best taste, let the finished cake cool and let it stand for 1 hour in the refrigerator.

A more satisfying pie will turn out if you add sour cream with mashed cottage cheese.

Brownie with raspberry jam

Ingredients:

  • 200 g high cocoa chocolate
  • 25 g of cocoa powder;
  • 150 g of flour;
  • 150 g raspberry jam;
  • 3 eggs;
  • 150 g of powdered sugar;
  • 1/3 tsp baking powder;
  • 180 g butter.

Cooking:

  1. Melt chocolate and butter on a stove in one bowl, combine them into a homogeneous mass.
  2. Mix the icing sugar with cocoa, move to the butter-chocolate mixture, stir.
  3. Add eggs to the mixture.
  4. Add to all the ingredients mixed with baking powder flour.
  5. Put half the dough into the mold, flatten.
  6. Spread jam on top.
  7. Continue with the remaining test, flatten again.
  8. Place the brownies in an oven preheated to 175 ° C, bake for 20 minutes.

Whipped cream is considered the perfect complement to the brownie served, and chocolate icing can be the final touch to finish the dessert.

Plum Pie (recipe from the New York Times)

Ingredients:

  • 12 frozen dark plums;
  • 175 g of sugar;
  • 1 tsp baking powder;
  • lemon juice;
  • a pinch of cinnamon;
  • a pinch of salt;
  • 110 g butter;
  • 2 eggs;
  • 120 g of sugar.

Cooking:

  1. Pound the butter with sugar.
  2. Add the eggs, salt and beat the mass.
  3. After mixing flour with baking powder, add it to the resulting mass.
  4. Put the dough in the mold and lay on top of the plums half (skin down). Sprinkle generously with lemon juice.
  5. Mix a spoonful of sugar with cinnamon, sprinkle with plums.
  6. Place the cake in an oven preheated to 175 ° C for 45 minutes.
  7. When serving, top up each portion with a scoop of ice cream.

If you want to make the cake more original, then a quarter of the beet sugar in the recipe should be replaced with brown sugar (cane).

In the US cuisine, this is one of the most famous pies, the legends of which still go about the history of its origin. For example, they say that, year after year, from the mid-80s and the second half of the 90s, the newspaper was forced to publish at the request of readers the heading of the recipe.

Apple jam pie

Ingredients:

  • 200 g apple jam;
  • 230 ml milk;
  • 60 g butter;
  • 1 egg
  • 40 ml of vegetable oil;
  • 10 g of yeast;
  • 430 g of first-class flour;
  • 100 g simple sugar;
  • salt a pinch.

Cooking:

  1. Dissolve sugar and yeast in warm milk.
  2. When the yeast begins to act, add vegetable oil and melted butter, salt.
  3. Add flour to the mixture.
  4. Knead not too elastic, soft dough, cover the dishes with a towel and put in a warm place for about 1 hour.
  5. Divide the approached dough into two parts.
  6. Carefully roll out one large portion and place in a baking dish.
  7. Spread the jam evenly on top.
  8. Make the braids / stripes curly from the second part and lay them on top of the jam so that it can be seen at intervals. Spread the pie along the edge.
  9. Separate the yolk from the protein. Beat the yolk and grease the pie with it.
  10. Count off the pie for 20 minutes.
  11. Place it in an oven preheated to 180 ° C for 45 minutes.

For various decoration of this cake, you can use the top of the dough, giving it an openwork shape with figures of animals.

 

For almost all pies (except for shortcakes), it is recommended to sift the flour once or twice before combining with other ingredients - this way it will be cleaned of all impurities and enriched with oxygen (and this will make the dough more airy).

In order for the pie from light dough not to fall down, it should first be allowed to cool for 20 minutes in the switched off oven with the door ajar, and then it is cooled to the end, without being pulled out of the mold, at room temperature.

To keep the cake relatively dry, before the wet filling is laid out (for example, frozen strawberries, canned cherries), it should be lightly sprinkled with starch.
