Ingredients:

  • chicken thighs - 4 pcs.;
  • raw smoked sausages - 75 g;
  • sweet bell pepper of red color - 1 pc.;
  • sweet bell pepper yellow - 1 pc.;
  • tomatoes - 400 g;
  • pitted olives - 30 g;
  • garlic - 3 cloves;
  • olive oil - 2 tbsp. l .;
  • dry white wine - 150 ml;
  • dried paprika - 1 tbsp. l .;
  • ground black pepper;
  • salt.

Cooking method:

Wash the tomatoes and make shallow cruciform incisions on them with a sharp knife. Dip the tomatoes for 2-3 minutes in a bowl of boiling water. Water should be such that the fruits are completely immersed in it.

Remove the tomatoes from boiling water and peel them. Then chop the pulp into small cubes.

Peel the garlic cloves and crush them with the side of a wide knife.

Rinse red and yellow bell peppers under running water, clean the stalk and seeds. Cut the pulp of peppers into thin strips.

Smoked sausages cut across into rings about 1.5-2 cm thick.

Cut olives in half across.

Rinse chicken thighs under running water, dry. Rub all over with black ground pepper and salt. Heat olive oil in a large deep frying pan or saucepan. Put chicken thighs in it and fry over high heat on both sides so that the meat is covered with a golden crust.

Remove the fried hips from the pan. Put the frying pan in which the chicken was fried again. Put chopped bell pepper in it. Sauté the pepper, stirring occasionally, until it is soft and browned.

Add chopped peeled tomatoes to a pan to pepper, sprinkle with paprika. Pour in white wine. Stir the contents of the pan thoroughly and bring to a boil.

Put the cut sausages in the pan. Stir, cover and simmer for about 15 minutes.

After 15 minutes, put the olives in the pan. Stir, bring to a boil. Put the fried chicken thighs in the resulting vegetable sauce, warm for 1-2 minutes and remove from heat.

Before serving, sprinkle the finished dish with herbs. Then serve and enjoy a delicious Mediterranean dish!
